Ingredients (makes 2 jars):
2 unripe mangoes,
1 large onion,
2 T salt,
1 t grated fresh ginger,
1 t grated fresh garlic,
1 t mild curry powder,
3-6 grated chilis (preferably green),
12 piri-piri peppers or 1 t tabasco (optional),
2/3 C white vinegar,
2/3 C lemon juice.

Grate unripe mangoes and julienne any mango flesh that cannot be grated. Slice onions finely. Place mango and onion in a non-reactive bowl and add salt. Allow to macerate 24 hours. Add all remaining ingredients and spoon into jars. Can be eaten immediately, but flavors will develop over time. Serve as a condiment.
